Create this quick and easy bagel recipe packed with fresh veggies and hummus.

INGREDIENTS
  • 1 fiber-rich bagel
  • 2-3 tablespoons hummus
  • 1/4 cucumber, thinly sliced
  • 1/4 bell pepper, thinly sliced
  • 1 small tomato, sliced
  • Handful of fresh spinach
BAGEL BUILD

Slice and toast your bagel.

Spread a generous layer of hummus on each half of the bagel.

Layer on sliced cucumber, bell pepper, tomato and spinach.

Add carrot sticks or shredded carrots, and sprinkle with salt, pepper and a drizzle of olive oil.
