- 2 New York Bakery Co. The Original bagels, split
- 4 tsp vegetable oil
- 100g mushrooms, sliced if large
- 2 handfuls spinach
- 2 Eggs
- 1 tsp chopped parsley (optional)
- Salt & Pepper
Fry the mushrooms with some oil until golden, then drop the spinach in and cook until wilted.
Crack two eggs in the pan with the rest of the oil and cook to your liking.
Toss half the fillings in each toasted bagel and top with some parsley (if you fancy), then take a big bite.
